Triple-Chocolate Mousse Cake

Serves 12 to 16
This recipe requires a springform pan at least 3 inches high. It is imperative that each layer is made in sequential order. Cool the base completely before topping it with the middle layer. We recommend Ghirardelli Bittersweet Chocolate Baking Bar for the base and middle layers; our other recommended brand of chocolate, Callebaut Intense Dark L-60-40NV, may be used, but it will produce drier, slightly less sweet results. Our preferred brand of white chocolate is Guittard Choc-Au-Lait White Chips. For best results, chill the mixer bowl before whipping the heavy cream. The entire cake can be made through step 8 and refrigerated up to a day in advance; leave it out at room temperature for up to 45 minutes before releasing it from the cake pan and serving. For neater slices, use a cheese wire or dip your knife in hot water before cutting each slice
INGREDIENTS
Bottom Layer
  • 6tablespoons (3/4 stick) unsalted butter, cut into 6 pieces, plus extra for greasing pan
  • 7ounces bittersweet chocolate, chopped fine (see note)
  • 3/4teaspoon instant espresso powder
  • 1 1/2teaspoons vanilla extract
  • 4large eggs, separated
  •  Pinch table salt
  • 1/3cup packed (about 2 1/2 ounces) light brown sugar, crumbled with fingers to remove lumps
Middle Layer
  • 2tablespoons cocoa powder, preferably Dutch-processed
  • 5tablespoons hot water
  • 7ounces bittersweet chocolate, chopped fine (see note)
  • 1 1/2cups cold heavy cream
  • 1tablespoon granulated sugar
  • 1/8teaspoon table salt
Top Layer
  • 3/4teaspoon powdered gelatin
  • 1tablespoon water
  • 6ounces white chocolate chips (see note)
  • 1 1/2cups cold heavy cream
  •  Shaved chocolate or cocoa powder for serving, optional (see note)
INSTRUCTIONS
  • 1. FOR THE BOTTOM LAYER: Adjust oven rack to middle position and heat oven to 325 degrees. Butter bottom and sides of 91/2-inch springform pan. Melt butter, chocolate, and espresso powder in large heatproof bowl set over saucepan filled with 1 inch of barely simmering water, stirring occasionally until smooth. Remove from heat and cool mixture slightly, about 5 minutes. Whisk in vanilla and egg yolks; set aside.
  • 2. In stand mixer fitted with whisk attachment, beat egg whites and salt at medium speed until frothy, about 30 seconds. Add half of brown sugar and beat until combined, about 15 seconds. Add remaining brown sugar and beat at high speed until soft peaks form when whisk is lifted, about 1 minute longer, scraping down sides halfway through. Using whisk, fold one-third of beaten egg whites into chocolate mixture to lighten. Using rubber spatula, fold in remaining egg whites until no white streaks remain. Carefully transfer batter to prepared springform pan, gently smoothing top with offset spatula.
  • 3. Bake until cake has risen, is firm around edges, and center has just set but is still soft (center of cake will spring back after pressing gently with finger), 13 to 18 minutes. Transfer cake to wire rack to cool completely, about 1 hour. (Cake will collapse as it cools.) Do not remove cake from pan.
  • 4. FOR THE MIDDLE LAYER: Combine cocoa powder and hot water in small bowl; set aside. Melt chocolate in large heatproof bowl set over saucepan filled with 1 inch of barely simmering water, stirring occasionally until smooth. Remove from heat and cool slightly, 2 to 5 minutes.
  • 5. In clean bowl of stand mixer fitted with whisk attachment, whip cream, granulated sugar, and salt at medium speed until mixture begins to thicken, about 30 seconds. Increase speed to high and whip until soft peaks form when whisk is lifted, 15 to 60 seconds.
  • 6. Whisk cocoa powder mixture into melted chocolate until smooth. Using whisk, fold one-third of whipped cream into chocolate mixture to lighten. Using rubber spatula, fold in remaining whipped cream until no white streaks remain. Spoon mousse into springform pan over cooled cake and gently tap pan on counter 3 times to remove any large air bubbles; gently smooth top with offset spatula. Wipe inside edge of pan with damp cloth to remove any drips. Refrigerate cake at least 15 minutes while preparing top layer.
  • 7. FOR THE TOP LAYER: In small bowl, sprinkle gelatin over water; let stand at least 5 minutes. Place white chocolate in medium bowl. Bring ½ cup cream to simmer in small saucepan over medium-high heat. Remove from heat; add gelatin mixture and stir until fully dissolved. Pour cream mixture over white chocolate and whisk until chocolate is melted and mixture is smooth, about 30 seconds. Cool to room temperature, stirring occasionally, 5 to 8 minutes (mixture will thicken slightly).
  • 8. In clean bowl of stand mixer fitted with whisk attachment, whip remaining cup cream at medium speed until it begins to thicken, about 30 seconds. Increase speed to high and whip until soft peaks form when whisk is lifted, 15 to 60 seconds. Using whisk, fold one-third of whipped cream into white chocolate mixture to lighten. Using rubber spatula, fold remaining whipped cream into white chocolate mixture until no white streaks remain. Spoon white chocolate mousse into pan over middle layer. Smooth top with offset spatula. Return cake to refrigerator and chill until set, at least 2½ hours.
  • 9. TO SERVE: If using, garnish top of cake with chocolate curls or dust with cocoa. Run thin knife between cake and side of springform pan; remove side of pan. Run cleaned knife along outside of cake to smooth sides. Cut into slices and serve.

    Our Triple-Chocolate-Mousse Cake is assembled in one pan and features progressively lighter layers.
  • BOTTOM LAYER
    A modified flourless chocolate cake made with whipped egg whites, egg yolks, butter, dark chocolate, and sugar provides a sturdy—but not dense—base. The cake collapses as it cools.
  • MIDDLE LAYER
    The layer's silky yet sliceable consistency is similar to regular mousse in texture, with flavor from dark chocolate and cocoa powder.
  • TOP LAYER
    Made with whipped cream and white chocolate, this layer is the lightest in flavor and texture. The addition of a little gelatin helps to make the topping sliceable.
TECHNIQUE
  • MAKING CHOCOLATE CURLS
    Wispy chocolate curls are an easy way to decorate desserts.
  • Use a vegetable peeler to peel curls off of a large block of milk or dark chocolate. (Large blocks of chocolate make nicer shavings than thin bars of chocolate.)
TECHNIQUE
  • SLICING SOFT CAKE
    To create perfectly smooth slices of soft desserts, the best tool is not a knife. It's a cheese wire—the minimal surface area produces less drag for cleaner, neater slices. If you don't have a cheese wire, dental floss will work almost as well.
  • 1. Hold the handles and pull the wire taut. Using your thumbs to apply even pressure, slice down through the cake. Wipe the wire clean with a dry towel.
  • 2. Make a second cut, perpendicular to the first. Continue to make cuts around the circumference.

Reese's Chocolate Peanut Butter Rice Krispie Treats

Reese's Chocolate Peanut Butter Rice Krispie Treats

6 cups Cocoa Krispies Cereal
18 Reese's Peanut Butter Cups, diced
5 Tbs butter
3 Tbs light Karo syrup
1 (16 ounce) package miniature marshmallows
3 Tbs smooth peanut butter
3 Tbs Nutella

Prep the Reese's Peanut Butter Cups by chopping into a small dice. Add the Cocoa Krispie Cereal and set this aside. Prep your 9x13 pan by coating with a non-stick cooking spray and set aside.


In a large pot melt butter over low heat. Add karo syrup and marshmallows and stir continuously until mixture is smooth. Remove from heat and add cereal mixture into the pot and fold together just until cereal is evenly coated. Gently press the mixture into the sprayed 9 x 13 in. pan.


In a small microwave safe bowl, add peanut butter. Microwave for 30 second to a minute to melt. Transfer to a zip top bag, snip the corner and pipe over the top of your rice krispie treats. Do the same with the Nutella.


Either let treats sit at room temperature to allow chocolate to set up, or you can pop the pan into the fridge for about 5 minutes to speed up the process. Cut and serve.


Makes a 9 x 13 in. sheet of treats.

Bahan-bahan ( saiz 10" loyang empat segi )

Bahan A
400ml santan pekat KARA 150ml air 1 helai daun pandan 1/4 sudu teh garam

Bahan B
225 gm tepung kacang hijau 750ml air ( ros guna tepung kacang hijau cap Kijang)

Bahan C
350 gm gula merah/gula melaka 50 gm gula pasir 100ml air ( ros guna gula merah)

Bahan D

1 1/2 cawan pati santan secubit garam

Cara-cara

1.Masak bahan C hingga gula larut. Biarkan sejuk.

2.Masak bahan D sehingga menjadi tahi minyak. Tapis dan biarkan 2 sudu besar minyak didalam periuk.

3.Sebatikan bahan B, gaul rata dan biarkan sekurang-kurangnya 2 jam supaya tepung kacang sebati sepenuhnya.

4.Satukan semua bahan A, B dan C. Gaul rata dan tapis. Tuang kedalam periuk yang berisi minyak tadi.

5.Masak atas api sederhana sambil sentiasa dikacau sehingga adunan kental dan berminyak. Angkat dengan segera dan masukkan kedalam loyang. Ratakan permukaannya.

6.Taburkan tahi minyak di atas kuih dan biarkan betul-betul sejuk sebelum dipotong

Aunt Annie soft petzel

Sedapnya makan petzel hari tu.. teringat2 la pulak bulan2 posa ni..
cari2 resepi petzel ni.. jumpa la satu.. baca review pon ok gak.. ramai gak yg dah cuba..
bila la nak cuba ni.. ( semangat berkobar2 nak test mixer baru kat rumah.. hehehe..)

INGREDIENTS: (untuk 6ketul je..)

3/4 cup warm water
0.563 teaspoon active dry yeast
1 tablespoon brown sugar <-- lebihkan sket lagi sedap.. komen org yg dah cuba..
0.563 teaspoon salt
1/2 cup bread flour
1 1/2 cup regular flour
1 cup warm water
1 tablespoon baking soda
to taste coarse salt
2 tablespoons butter (melted)

DIRECTIONS:

Sprinkle yeast on lukewarm water in mixing bowl; stir to dissolve. Add sugar, salt and stir to dissolve; add flour and knead dough until smooth and elastic. Let rise at least 1/2 hour.

While dough is rising, prepare a baking soda water bath with 2 cups warm water and 2 Tbsp baking soda. Be certain to stir often. After dough has risen, pinch off bits of dough and roll into a long rope* (about 1/2 inch or less thick) and shape. Dip pretzel in soda solution and place on greased baking sheet. Allow pretzels to rise again. Bake in 450 degrees F oven for about 10 minutes or until golden. Brush with melted butter and enjoy!

Toppings: after you brush with butter try sprinkling with coarse salt. Or for Auntie Anne's famous Cinnamon Sugar, try melting a stick of butter in a shallow bowl (big enough to fit the entire pretzel) and in another shallow bowl make a mixture of cinnamon and sugar. Dip the pretzel into the butter, coating both sides generously. Then dip again into the cinnamon mixture. Enjoy!

* The longer and thinner you can make the dough rope, the more like Auntie Anne's they will be. (Of course I don't have the counter space!)

*Sweet butter, not regular butter, is one of her secrets!

Note: You have scaled this recipe to serve/make 6 (originally serves/makes 12). Please adjust for pan sizes, cooking times, measurements in the directions, and divided ingredients accordingly.

Carrot Cake resepi dari Alin

Carrot Cake (kak azlita,mat gebu & kak jee..)

CARROT OAT CAKE

Bahan2nya:

1 cawan tepung gandum *
1 sudu kecik baking powder * ita guna double action BP(atas saranan kak Jee)
½ sudu kecik soda bicarbonate *
½ sudu kecik garam *
1 sudu kecik serbuk pala
1 sudu kecik serbuk kayu manis * (semua bertanda * disatukan & ayak)
2 biji telor gred A
¾ cawan minyak jagung (kjee guna canola)
¾ cawan gula halus (kjee guna gula perang)
1¼ cawan carrot sagat ( guna kitchen paper towels untuk perapkan airnya)
½ cawan nenas tin (cincang kasar2 & toskan)
½ cawan oats
½ cawan gajus - ita guna pistachio (bakar sekejap)

Bahan cream cheese topping:
½ ketul mentega
½ ketul philadelphia cream cheese
beberapa titis vanilla
3 sudu besar gula icin
2 sudu besar whipping cream - ita tambah

Cara membuatnya:
Panaskan oven 180C. Kemudian ambil loyang empat segi 7x7inci dan letak sedikit minyak dan dialaskan dengan kertas minyak. Jika tidak, tabur sedikit tepung setelah diminyakkan acuan itu.
Telor dicampur bersama minyak dan gula. Dikacau kira2 lima minit hingga sebati. Kemudian masukkan semua bahan yang telah diayak. Kacau hingga sebati guna spatula. Kemudian masukkan oats, carrot dan nenas dan gaul lagi dengan spatula. Akhir sekali masukkan kacang gajus yang telah diramas sedikit hingga pecah2.
Tuang ke dalam acuan dan masukkan ke dalam oven. Bakar selama 45 minit hingga 1 jam.

Cara membuat cream cheese topping:
Satukan semua bahan2 dan putar sampai sebati dan halus. Kjee putar guna tangan. Kemudian sapu atas kek yang telah disejukkan terlebih dahulu. jika terlalu pekat dan susah nak disapukan atas kek, tambahlah sedikit susu segar.
Resipi ini sesuai untuk keluarga seramai tiga orang jer. Lebih dari tu kena gandakan bahan2nya.

Setelah kek masak sejukkan dahulu. Potong kek kepada 2 bahagian. Letakkan Cream Cheese toping atas lapisan kek yg telah dipotong. Kemudian tindihkan dgn satu lapisan lagi. Untuk kek buat 2 adunan cream cheese kerana tak cukup kalau satu adunan. Untuk carot yg kat atas kek tu ita gunakan fondant.

Ni cake yang ibu dah cuba... dina suka betui makan cream cheese tu..

Carrot Cake Recipe




Ingredients:
2 cups flour
2 tsp. baking soda
2 tsp. ground cinnamon
1/2 tsp. salt
3 large eggs
2 cups sugar
3/4 cup vegetable oil
3/4 cup buttermilk
2 tsp. vanilla extract
2 cups grated carrots
1 cup chopped pecans

Instructions:

1.Stir together first 4 ingredients. Beat eggs and next 4 ingredients at medium speed with an electric mixer until smooth. Add flour mixture, beating at low speed until blended.

2.Fold in carrots and nuts. Pour batter into a greased and floured 13" x 9" pan or muffin cups.

3.Bake at 350° for 30 minutes; cover pan loosely with aluminium foil to prevent excessive browning, and bake 10 more minutes, or until a wooden pick inserted in centre comes out clean.

Note : Kat ingredient tu ada buttermilk tapi kalau susah nak dapat boleh ganti dengan 3/4 cup susu segar dlm kotak + 1 sudu teh jus lemon atau cuka makan. Bila dah campur tu jangan kacau dulu, biar dia mendak dalam 10 minit. dah mendak tu baru kacau and tuang semua sekali dalam cake mix. Alin selalu guna 1 cup gula pasir + 1 cup brown sugar.

Topping cream cheese frosting
250gm cream cheese (alin selalu guna yang philadhelphia cheese tu) + 100g butter kalau nak sedap yang unsalted + 1 sudu kecil vanilla + 3-4 cup icing sugar. depend nak manis mcm mana. nak senang frosting kan dia, dah mix semua, simpan jap dalam peti ais dlm 1/2 jam lepas tu baru buh atas kek. mmg sedap.

masa mix tu kan kena make sure butter dengan cheese to room temperature lembut dia kalau keras nnt dia ketul2 dgn gula tak sedap.

n lagi satu ayak gula icing.

Kuih Kole Kacang

Terima kasih pada tuan resepi ni noreen,sukatannya mmg ngam tak perlu tambah atau kurangkan apa-apa bahan lagi.
Ikut step by step,insyallah menjadi.

Selamat mencuba:) dan selamat berbuka puasa.

Bahan-bahannya:

1 cawan tepung kacang hijau
2 cawan santan(500 ml)
secubit garam

Untuk air gulanya:
1 cawan gula merah
2 camca besar gula pasir
1 cawan air (250 ml)
1 helai daun pandan

Tahi minyak: 1 cawan santan pekat.(250ml)

Cara-caranya:)
Masak santan pekat hingga keluar minyak dan masak sampai garing tapiskan tahi minyak tu -ketepikan
Masak air gula dan pandan sampai hancur dan tapiskan-ketepikan
Satukan tepung kacang hijau,air gula,garam,dan 2 cawan santan kedalam peruk.Kacau betul-betul sebati agar adunannya tidak berketul-ketul
Masukkan minyak dari tahi minyak tadi kedalam adunan yg dibancuh tadi dan kacau atas api yang perlahan sampai likat.
Sapukan bekas yang sesuai dengan minyak masak baru curahkan adunan yang telah likat tadi
Biarkan kuih betul-betul sejuk baru dipotong.Sebelum dipotong taburkan dengan tahi minyak tadi.

Desert : Mille-feuille

Nampak macam senang je.. pastry puff pun ada lagi kat rumah..

Bahan2 yg diperlukan,

Pastry Puff jenama kawan
Cream Pastry 
Buah strawbery @ blueberry filling

cara-cara nak buat cream pastry (resepi chef amir):

320gm pastry cream (boleh rujuk sini) - kemudian sejukkan
12gm gelatin
40-50ml air sejuk (larutkan gelatin guna double boiler)
80 gm topping cream

Caranya:
sediakan pastry cream dulu.. then cairkan gelatin guna kaedah double boiler, masukkan gelatin ke dalam pastry cream. Pukul topping cream masukkan ke dalam campuran pastry cream tadi..

Bakar pastry puff then sejukkan.. lapiskan pastry dengan cream pastry tadi.. lapiskan pastry puff then cream pastry.. pastu letak la buah @ blueberry filling..siap..

Pannacotta - Italian Pudding..

Pannacotta is a traditional creamy pudding originating from Piedmont in Northern Italy. “Panna cotta” translates to cooked cream in Italian. This rich and delicious version is flavored with strawberries and vanilla. Makes 6.

Ingredients
  • 1/2 cup of milk
  • 3 teaspoons of gelatin
  • 20 fl oz of cream
  • 3/4 cup of caster sugar
  • 4 fresh strawberries
  • 1 teaspoon of vanilla essence
Cooking Instructions
Lightly grease 6 pudding molds.
Pour the milk into a small bowl. Stir in the gelatin and set aside.
Place the cream, sugar, strawberries and vanilla into a saucepan. Slowly bring to a boil, stirring until the sugar dissolves. Remove from the heat, add the gelatin mixture and stir until the gelatin dissolves. Set aside to cool for 15 minutes.
Strain the mixture and pour into the prepared molds. Refrigerate for at least 4 hours, or until set.
To serve the pannacotta, dip the outside of each mold in hot water for 10 seconds which should make it easier to remove them from the molds, then run a sharp knife around the inside of each mold and invert onto a serving plate.
Pannacotta can be served as is or topped with fresh fruit like mixed berries and strawberry sauce.
